Question by Adam K: Do you recommend the Art Institute of Washington for a culinary degree?
I want to open a restaurant and was wondering if you recommend any culinary schools in DC or should I just not bother with culinary school. I am not sure if going to a school like Art Institute of Washington or Stratford University will be a waste of time and money or not. Do you recommend a school/program.

Well, I certainly would not recommend the Art Institute of Washington for a CULINARY career. The Art Institute teaches visual arts, not cooking. ;-)

But you probably meant to ask about the Culinary Insitute of Washington. The son of a good friend attended there, and he is earning his living as a chef (at a country club, in his case), so he thinks the training and skills he developed there were good.

Unfortunately, that is not the whole answer, because I think you need to ask yourself a question first: Do you really want to work in a restaurant? The hours are a killer. You have to be working in the evenings and on weekends, because that’s when people go out to eat. Unfortunately for you, it’s also the time when *you* would like to be going out, not necessarily to a restaurant. And the pay is not great, especially at first. So this has to be a labor of love. If you really want to learn to cook imaginatively, a good cooking school is the way to do that. But the desire has to be inside you–no one, and no school–can put it there.

Even if you want to work in a restaurant, you also should think about what you want to do. Is cooking the whole point? If so, then a cooking school, whether the Culinary Instute of Washington or some other place, is definitely the way to go. But if you could be happy running the business of a restaurant–working the front of the house, for example–then you should seriously think of a program in hotel and restaurant management. The best known, and probably the actual best of these, is the one at Cornell University in Ithaca, NY. Another excellent program is at Johnson and Wales college in Rhode Island. Johnson and Wales is much easier to get into than Cornell. And there are plenty of other good programs around the country.

On the other hand, if you want to cook, there is little question that the most famous cooking school in the country, and one of the best in the world, is the Culinary Institute of America (known by its initials as “the CIA”). The training there is pretty much without equal. Most of the other culinary schools, including the Culinary Insitute of Washington, pattern their names on the original CIA.

You have a lot of thinking to do, so I am also going to suggest a book for you to look at that might help you decide. In “The Making of a Chef: Mastering Heat at the Culinary Institute,” the author, Michael Ruhlman, describes what it was like for him to go through the CIA training program. Actually, he only stayed for part of the program, because he is a writer, not a chef, but reading the book will give you some idea of what you would be doing and help you figure out if it is what you want. I know that some libraries in the Washington area have this book, or you can get it in paperback from Amazon.

Question by Ding W: Is there any art college which is suitable for students who want to study Visual Effects?
Is there any art college suitable for students who want to study Visual Effects? I think the SCAD’s courses are really good. But is there any other colleges similar or better? Thanks!

Aside from SCAD a few more top-notch Visual Effects schools are the Vancouver School of Visual Effects, and Gnomon School of Visual Effects

A few of the “Art Institutes” have Visual Effects Majors also, but they are very expensive and not really worth the price. You have to work really hard to compete with students from the larger Visual Effects schools. From what I hear, the Art Institute in Denver, CO has the best A.I. Visual Effects department in the country, Best equipment, very large green-screen, etc.

Every now and again, my library takes a field trip somewhere in the city. This time, we got an architectural tour of the IIT Campus.

Crown Hall, Mies van der Rohe, 1950-56. Declared a landmark in 2001 and placed in the Register of Historic Places in 2005.

Question by Lydia: Does the culinary program at the Art Institute restrict hair dying?
I currently attend Johnson and Wales and there is a policy against unnatural hair color. I am transferring to the art institute this fall. Before I dye my hair purple, I want to make sure it is permissible.

Please *avoid* those private For-profit schools such as the “art institute”. Their course credits usually do NOT transfer to other schools, even if the for-profit school is regionally accredited (as opposed to only nationally accredited).

This consumer site has a lot of negative posts by former students of those for-profit schools (including the “art institute”), and please heed the students’ warnings: and can search.

Please instead consider the more affordable (and usually more reputable) community college or even the county vo-tech school as long as the program is accredited within the industry.

If you call one of the local community colleges or county vo-tech schools that offer culinary, perhaps you can ask them about their policy of proper attire, including hair dye. If they do not permit the unnatural hair color, perhaps you can color your hair that way during the summer (or other time when planning to have time off from school).

Question by royluxomburg: Is the group of schools known as “The Art Institutes” any good?
I’ve been looking at “The Art Institute of Indianapolis”. They have schools all over the country, but I can’t tell if they are actually a good school or if they’re a joke in the art world.

I looked into them myself. I am a non-traditional student, in other words older! :) , and was looking at different options to be “quick” and use my time wisely, but I discovered that the best way would be to go the traditional route and get a good education even though it takes a few years.

I am a graphic arts major, not exactly fine arts, but similar. I do not think the Art Institute is a joke in the art world, but I just think you would get a better education and better experience from a traditional college. I do know my art teachers who have been in the art world for many years have said that getting your BFA (Bachelor of Fine Arts) goes a lot farther than getting a “quickie” BA or BS degree.

Something you could do would be to call local places where you would like to work and outright ask them if they would hire someone who had graduated from the Art Institute. I think it comes down to your skill and how confident you are in yourself when you go to get a job. Whether you get that skill at the Art Institute is something I can’t answer definitively, but I hope I gave you something to think about. :) Good luck! I am 41 by the way and if I can do it, you can do it!! I just graduated from community college with an AA in Art and am transferring to a four-year college for my BFA. Go for it and have fun, you only live once.
